1. Approximately 80% of the world’s bluefin tuna catch is used for sushi.

Traditionally, ginger (gari) was served with sushi as it will cleanse the palate when eaten between different kinds of sushi. Ginger also has minor anti-microbial properties and it is thought that eating it with raw food can assist in the prevention of sickness if there is any contamination of the product. Wasabi also exhibits similar characteristics and for that reason, both have stuck as an accompaniment to sushi.
3. Like a samurai, the blade of a professional sushi chef’s knives must be re-sharpened every day. This is especially important when working with sashimi – raw, thinly sliced fish.
4. Sushi lovers looking for something new? A rare delicacy indeed is sashimi made from the deadly puffer fish, called fugu sashi.

5. In Japanese food terminology, the word “sushi’ actually refers to vinegar rice, and not fish, while the word “sashimi” means pierced flesh.
